Mix and match different vegetables to fit your palate, and customize it just for you. These 4-cheese tortellini takes just 4 minutes to cook, this truly is the easiest pasta salad I have ever made!
No-Fuss Tortellini Pasta Salad is great for a weeknight meal, lunches, or even to take for your next BBQ you are attending. I add in mini pepperoni so it adds some protein to the dish. I make this the morning of, and then I have a dinner ready that I can simply pull out of the fridge and serve with some garlic bread, or just eat alone. You have cheese stuffed tortellini, crisp vegetables, and then an Italian dressing that completes the dish. If you happen to have a homemade dressing recipe your family loves, use that! I just grabbed a bottle at the store to make it that much easier, I find with a shake of the bottle and pour it taste great.
When the weather gets warmer I love spending time outdoors. Working in my flower beds and garden is where my heart is happy. I also love heading to the farmers market and grazing over all the goodies for sale! Sometimes I buy some homemade zucchini bread and jelly and come home and enjoy. You will always find me outdoors enjoying the warm weather, it is what I truly love. I try to make the most of it, as I know colder months will soon be on the horizon again.
Veggies You Could Add To the Tortellini Pasta Salad
I used what I had on hand for this, but you can always add other ingredients. I thought I would help you out and give you some ideas if you are unsure what might or might not work. Add in ingredients that fit your family and what they want.
- Diced Tomatoes or Grape Tomatoes
- Frozen peas (thawed)
- Banana peppers
- I have even diced up salami and put in mixed with pepperoni.

No-Fuss Tortellini Pasta Salad
- 1 bag Tortellini Pasta ( I used 4-Cheese)
- 1 pepper
- 1 cucumber
- 2 carrots
- 16 oz bottle italian dressing
- 8 oz mini pepperoni slices
First off you want to cook your tortellini pasta as directed on the package. When it is done drain pasta and let cool by running cold water over it.
While that cooks, peel and dice up all your veggies. For the carrots, I used a peeler to make the strings of carrots, and then I peeled the cucumber to slice. Drain the juice on the black olives.
Add all your ingredients into a bowl, pour about 2/3 cup of dressing over the pasta, and stir well. Then before you serve, stir again and if need be add more dressing to keep it moist.
